Mix all ingredients in a blender or food processor. Once the base is done, you can store it in ice cube trays, cover and freeze. Once solid you can leave in ice cube tray or transfer to a freezer bag. Take one sofrito cube to add to each meal you will be preparing. If you are using the sofrito within two weeks, then keep it fresh in an mason jar or any glass container with a tight lid.
