During my travels to multiple countries, I have tried an array of "must do" local foods. Some have been out of this world (lasagna at Angelino's in Rome, Hibiscus juice in Petra). Some have been good, but others have lack the it factor, SOFRITO, a base sauce or seasoning used in many Latin American, Caribbean, and Spanish dishes. Born and raised in Puerto Rico, sofrito has been part of my culture, recipes passed down from generations, it is in my DNA. For me, Sofrito is the based of puertorrican cooking, so I make my own, utilizing fresh ingredients.
I will admit I'm not a cooking fan, but when I do, sofrito is the star of the show. The fresh smell as you make it; the smell as you are cooking, it really takes me back to my childhood. Food has a special ability to bring people together. I often find this in my own life and travels. As I experience different world cuisine, it all goes back to seasoning, that it factor, and to me there is nothing better than sofrito to compliment any dish.
